Oat bread – Delicious and ease to make it…and it is so nutritious !
Oat is a gluten free grain. You can purchase oat flour or make your own by whirling rolled oats in a food processor. Oats provides more protein and fibre than regular flour.
Teff is an ancient grain original from Ethiopia, and gluten free. It is a good source of dietary fiber and resistant starch, which helps manage blood sugar, weight control and colon health.
1 cup of teff cooked = 7g of fiber and 123mg of calcium.
Tapioca or arrowroot flour help to give the dough the necessary texture.
Ingredients:
- 1 cup of teff flour
- 1 cup of oat flour
- 1/2 cup of tapioca flour or arrowroot flour
- 1/2 coffee spoon of salt
- 1 coffee spoon of brown sugar or honey
- 2 tsp of coconut oil
- baking powder
- 1 1/2 cup of water or enough to adjust the dough
Directions:
Pre heat the oven at 180 °c.
1- In a bowl put all the dry ingredients and stir. Add the water and coconut oil, and keep mixing. The dough should to have a little thick consistency, and if necessary add more water, until it is neither soft nor hard.
2- Put the mixture in the proper loaf for bread ( I like the silicon loaf ) and add some pumpkin and sunflower seeds to decorate the bread.
3- Place into the oven and bake for around 55 minutes. Remove from the oven and take it out the loaf and let it cool. Then the bread will be ready to eat.
This bread is ideal for those who want to follow a gluten-free diet, and are rich in fiber, good for your intestine !
