Colored Pancakes
Oat flour Pancakes:
This is a good way to replace your refined pancakes with healthy oatmeal !
Servings = 2
Prep. Time = 25 minutes
Cook time = 30 minutes (for the sauce)
Ingredients
- 1 cup of oat flour
- 1 egg (if you prefer you can make without egg)
- salt to taste
- 1 cup of water or vegetal milk (coconut milk, almond milk, etc..)
- a handful of spinach
- 1 carrot
- Extravirgin olive oil
How to make it:
For green pancakes : in a blender put the water and the spinach. Blend and strain in a sieve and leave it aside.
For the red pancakes : in a blender put the water and the chopped carrot and blend. Then strain and leave it aside.
You make the pancakes one at a time.
For the greens : you put back the green water into the blender, and :
1 – Add the oat flour, the egg and salt.
2 – Whisk until you get a thick consistency .
3 – In a skillet heat a little butter ghee or coconut oil, and pour half a ladle of the mixture.
4 – Spread to form the round pancake, then cook it, and turn to the other side to cook it, and remove from the heat.
For the Filling :
You can use ricotta cheese or tofu.
1 – Mash the ricotta or tofu, with finely chopped onion, parsley, salt, pepper and a little olive oil.
2 – Take the pancake and put a good amount of the filling, in each one, and wrap.
3 – Arrange the pancakes in a loaf.
For the Sauce :
Sauce of Baked Tomatoes
- 6 tomatoes
- 1 onion
- 2 garlic cloves
- Himalayan salt
- herbs such as oregano , basil
- turmeric
1- Arrange all the ingredients in a loaf and bake it, in the oven at 180°c .
2- Bake until soft.
3- Remove from the oven and blend. The sauce is ready !
4- Pour over the pancakes and bake for 10 minutes.
You can filling the pancakes, with others ingredients such as creamy vegetables, mushrooms, etc…
