Quinoa Avocado Salad is:
A flowering plant in the amaranth family. Is one of the world’s most popular health foods, is gluten free, high in protein and contains sufficient amounts of all nine essential amino acids. It is also high in fiber, magnesium, B vitamins, iron, potassium,calcium, phosphorus, vitamin E and antioxidants. Quinoa is packed with flavonoids, including Quercetin and Kaempferol.
It has been eaten for thousand of years in South America and was a important crop for the Inca Empire.
This magnific salad is very nutritious because combine fat from avocado, protein and fiber from quinoa, Vitamin K and C from a leaf green white cabbage.

Ingredients:
200 g of white quinoa
1 avocado
1/2 white cabbage
1 red onion
Grains of pomegranate
sliced almonds
Himalayan salt
pepper
herbs (parsley, thyme, oregano)
How to make the quinoa avocado salad:
1- In a pan put the quinoa, add 2 cups of water, salt and herbs. Let cook about 10 minutes at low heat.
2- In a pan sauté the sliced onin with the cabbage sliced thin, in a little butter (organic or ghee).
3- On a plate put the cabbage.
4- Place the quinoa in a round mold and put on top of the cabbage.
5- Cut the avocado into very thin slices and place over the quinoa. Garnish with the grains of pomegranate and sliced almonds. Sprinkle with pepper and Olive Oil.
All the ingredients should be organic !
