Baked Sweet Potatoes Rösti
Sweet Potatoes
This is a delicious Swiss dish!
Traditionally it is made with regular potatoes, but I adapted it with sweet potatoes which I love ❤️.
This variety are high in fiber and beta-carotene. It is an antioxidant which is very effective at rising blood levels of vitamin A. The antioxidant activity of sweet potatoes increases with the color intensity of their flesh. The purple variety scores the high.
Potatoes are nutritious and very filling. They can be eaten boiled, baked, steamed or fried. I choose baked, because I use to cooking without oils.
Usually sweet potatoes can be found in different colours, such as white, violet, purple, yellow and orange. They are mainly composed of carbs, which most of the carbs come from starch, followed by fiber and protein.
As a side dish I used red cabbage and salad.
Ingredients:
Servings=2
Prep time = 20 minutes
Cook time = about 30 minutes
- 1 little red cabbage
- 600 gr of sweet potatoes
- 1 crushed garlic clove
- 2 onions
- a handful parsley
- 1 tbsp of pine nuts
- 1 tbsp of raisins
- Himalayan salt to taste
- 1 tbsp butter ghee
How to make it
1 – Steam the potatoes for 5 minutes. Peel them and grate.
2 – Sauté onion and garlic in butter ghee until soft. Pour in the grated potatoes, add salt, pepper and chopped parsley, and mix well.
3 – On a baking sheet lined with parchment paper, put the potatoes in a round ring and form the rösti.
4- Bake the Rösti for about 30 minutes (160c)
5- Cut the cabbage thinly and cook at low heat, with garlic and a tsp of apple cider vinegar. Add salt, pepper, pine nuts and raisins.
6- Prepare a salad of your choice.
7- On a plate arrange the rösti, cabbage and salad.
