Baked Merluzzo (Cod Fish) for lunch or dinner is a dish so easy to prepare and also a light meal. If you don’t have much time, this dish is quick to make. I chose Gadus Morghua from Atlantic, which is considered a Cod variety.
Merluzzo have a soft, white flesh and mild taste. It is high in protein but low in calories, fat and carbs. Thus, lean fish can promote good health and may even be weight-loss friendly.
Unlike common recipes, I used sweet potatoes to give a special taste.

Prep. time = 20 minutes
Cooking time = 30 minutes
Ingredients:
- 3 sweet potatoes
- 2 zucchini
- 2 red onions
- 100g of peas
- Himalayan salt
- turmeric, pepper, oregano, cilantro
- black olives
- ExtraVirgin Olive Oil
- 2 cod fish filets (salted and frozen)
How to make it:
1 – Wash the fish and bring to a boil for 10 minutes. To remove the salt change the water, and keep boiling for another 10 minutes. Take the bones and skin out of the fish.
2 – Steam the sweet potatoes until soft. Steam the peas and zucchini.
3 – In a pyrex place the fish in pieces, sliced potatoes and zucchini, peas, olives and sliced onions. Drizzle with Organic ExtraVirgin Olive oil and sprinkle with turmeric, pepper, oregano and a pinch of salt. On the top add the chopped cilantro.
4 – Bake it in the oven pre-heated at 180c for 15 minutes. Remove to the oven and serve!
