Vegan Avocado Muffins
Vegan avocado muffins is a good savory option for a snack or a meal. In this recipe I used the avocado that perfectly replaces eggs giving moisture, fat and elasticity. If you don’t like avocado I swear the taste is imperceptible.

Cook time = 30 minutes
Ingredients:
- 1 ripe avocado
- 1/4 cup of coconut oil
- 1/2 cup of water
- salt to taste
- 1/3 cup arrowroot
- 1/2 cup of teff flour
- 1 tsp baking soda
- 1 tsp of lemon juice
- fresh green spice
- black cumin
- 1/2 cup of red onion
- 1/4 cup of chopped tomatoes
- 1/3 cup of chopped olives
How to make it
1- In a blender put the avocado, coconut oil, water, salt, lemon juice, fresh green spice, cumin and blend until it forms a smooth cream.
2- Add the arrowroot and blend again.
3- Put the dough in a bowl and add the teff flour. Stir well until the dough is consistent and creamy. If it needs add more water.
4- Add the onion, tomatoes and olives.
5- Add the baking soda.
6- Put the dough in a muffin pan, and bake in a pre heated oven 180°c, for 30 minutes.
It is better to serve warm !
