Yummy Stuffed Red Onions Dish
Stuffed Red Onions is super easy to make!
In this recipe I combine red onions, red rice risotto with mushrooms and broccoli 🥦. It is a healthy vegan meal and super nutritious!
Red onions contain vitamin C, fiber, iron, calcium and high polyphenol and flavonoid content, including quercetin, and sulfur compounds.
Ingredients:
Servings = 2
Prep. Time = 20 minutes
Cooking time = 25 minutes
- 2 big red onions
- 100g of mushrooms
- 100g of red rice
- 1 small broccoli
- 1 carrot
- 1 clove of garlic
- Himalayan salt
- Curcuma, parsley, pepper.
- 1 tbsp ghee butter.
How to make it:
1- Cut in half the onions and put them to steam for 8 minutes.
2- Cut the broccoli into small pieces and wash. Put it to steam for 8 minutes.
3- Place the rice (soaked and well washed) into a pan with the sliced carrots, crushed garlic, salt and cover with water a finger above the rice and let it cook for about 25 minutes until risotto consistency. Sauté the mushrooms until soft and add to the rice, mixing well.
4- Sauté the broccoli with a tbsp of ghee butter and add a pinch of turmeric and salt.
5- Take the onions and stuff it with the risotto. Bake for about 15 minutes until onions are soft.
6- In a plate arrange the stuffed onions and broccoli 🥦 and add more risotto to complement. Put a little chopped parsley for garnish. You can add a drizzle of olive oil on the top to taste.
