Emmer flour bread

Emmer is one of the earliest forms of cultivated grains. Emmer in its wild form is a cross between Einkorn and grass. It is unique in flavor, nutritional benefits and genetic make up. Emmer has 28 chromosomes and modern wheat has 42. Emmer contains high levels of vitamins, minerals, antioxidants as well as fiber and protein, and low levels of gluten.
In this recipe I used organic whole emmer flour from Switzerland. You can make it also with Einkorn or Spelt flour.
Prep. time = 5 minutes
Rising time = 20 minutes
Cook time = 25 minutes
Servings = 10 little breads
Ingredients:
500g whole emmer flour or spelt flour
50g of fresh organic gluten free yeast
1 tbsp Himalayan salt
1 cup of water (if needs you can add more)
How to make it :
1- In a bowl place the flour.
2- Dissolve the yeast in a little warm water.
3- Add salt and mix well.
4- Add the yeast, water and work the dough until smooth.
5- Cover the dough with a cloth and let it rise for about 20 minutes. The dough should double in size.
6- Work the dough again and form little breads. Let the dough rest for about 15 minutes and place in the preheated oven at 180 c for 25 minutes.
7- Your bread will be ready when golden!
