Delicious Open Pancake with spinach cream !
In this recipe Pancake with spinach, I combine spinach cream, baked pumpkin and goat cheese (you can make it with vegan cheese).
Pancakes made with whole Spelt flour are a better option, because is low in gluten.
Spinach is originated in Persia. It belongs to the amaranth family and is related to beets and quinoa.
Eating Spinach may benefit eye healthy, reduce oxidative stress, help prevent cancer and reduce blood pressure levels. It is low in carbs but high in insoluble fiber which may benefit your digestion.
Pumpkin is highly nutritious and particularly rich in vitamin A. Besides being packed with vitamins and minerals such as magnesium, phosphorus, zinc, folate and B vitamins, is relatively low in calories, as it’s 94% water.
Goat cheese is a good alternative to cow’s milk. While cow’s milk has both A2 and A1 beta casein proteins, goat cheese has only A2 beta casein. The difference means that goat cheese and goat milk are easier on the digestion.
The vitamins, minerals, and heart-healthy fats in goat cheese improve health in a number of ways. Cooper, for example, helps produce red blood cells, which carry oxygen from the lungs to the other tissues of the body. Copper also aids in the absorption of iron and other nutrients.

Prep. time = 20 minutes
Cooking time = 10 minutes plus 30 minutes to bake pumpkin.
Ingredients:
- 50g spelt or oat flour
- 1/2 cup of plant-based milk
- Himalayan salt
- Oregano
- a bunch of spinach
- 1 onion
- 1 garlic clove
- 1 egg or vegan egg
- 100g of pumpkin or 2 slices
- 1 small goat cheese or vegan cheese
- chopped parsley
How to make it :
1 – In a blender put the spelt flour, vegan milk, 1 egg, salt and a pinch of oregano and blend.
2 – Put a spoonful of the dough in the heated pan and form the pancake.
3 – Sauté spinach with garlic, onion, salt, some pepper and put in the mixer to form a cream.
4 – Bake the sliced pumpkin until soft.
5 – In a plate put the pancake, cover with the spinach cream, add 2 slices of baked pumpkin and put the goat cheese on the top with an onion slice. Sprinkle with chopped parsley, some pepper or herbs of your choice.
Now is ready to eat, enjoy!
