Pumpkin Gnocchi:
Pumpkin is commonly viewed as a vegetable, but scientifically is a fruit, as it contain seeds. Nutritionally is more similar to vegetables. It’s specially rich in vitamin A, and very high in Beta-Carotene, a carotenoid that your body turns in vitamin A. Also is rich in Vitamin C, Potassium, Copper, Manganese, Vitamin B12, Vitamin E and Iron. It has small amounts of magnesium, zinc, phosphorus, folate and several B vitamins. Is relatively low in calories, as it’s 94% water. It’s also high in lutein and zeaxanthin that may protect your eyes.
Ingredients:
- 1 1/2 cup of cooked and mashed pumpkin
- 1 cup of teff flour
- 2 tsp of chopped salvia
- salt and pepper to taste
- 1 tsp of coconut oil or ghee
- 1/2 cup of crushed pecan nuts
Mint and spinach pesto sauce :
- a handful of mint
- 2 cups of spinach
- 1 cup of Brazil nuts
- 2 tsp of lemon juice
- 1/2 cup of olive oil
- 2 mashed garlic cloves
How to make pumpkin gnocchi:
For the gnocchi :
1- In a pan stir all the ingredients in a medium heat, and cook until it comes off the pan, and let it cool.
2- In a floured surface, make small gnocchi until finished the dough, and place to oven 180°c and bake around 15 minutes. Remove from the oven and arrange the gnocchi on a platter.
For the mint pesto sauce :
1- Put all the ingredients in a blender, and gradually adding the olive oil.
2- Put the sauce on the top of the gnocchi and is ready to serve.
