Delicious butternut squash recipe!
In this recipe I choose butternut squash for its versatility and sweet nutty flavor. It is not only tasty but also is full of vitamins, minerals, fiber and antioxidants, and is low in calories.
Antioxidants help prevent or slow cellular damage and reduce inflammation. Butternut squash is an abundant source of beta-carotene, vitamins C and E, (Powerful antioxidants).

Ingredients:
Servings = 2
Prep. Time = 30 minutes
Cooking time = about 45 minutes.
- 1 medium butternut squash
- 10 olives pitted
- 1 onion
- 1 crushed black garlic
- 1 chopped tomato
- a handful of coriander
- chopped leeks
- a handful of peas
- Chopped tofu
How to make it:
1 – Cut in half the butternut squash, and remove the seeds.
2 – Put into the pre-heated oven at 180c and bake it for about 45 minutes.
3 – Remove from the oven and with a spoon remove the flesh of the butternut squash, but not all.
4 – In a pan put all the ingredients less the tofu and coriander and cook at low heat until soft.
5 – When the ingredients are cooked add the flesh of butternut squash and stir. Remove from heat and add the tofu and coriander. Mix well and stuff the butternuts. Put in the oven for more 10 minutes.
Now is ready to eat, enjoy !
