Spelt flour Pizza is a healthy version of conventional wheat flour. Spelt (Triticum spelta), also known as dinkel wheat, is a species of wheat that has been cultivated since approximately 5000 BC.
The strands of gluten will actually start to break if the dough is kneaded for too long, giving the final dough a crumbly rather than chew texture. The key, then, when working with spelt flour is to avoid over-mixing it.

Ingredients:
For the crusty
250g whole spelt flour
50g fresh yeast
Salt for taste (1 teaspoon)
For the toping
Tomato sauce (homemade)
Alpine cheese or another of your choice
Red Onions
Black olives
4 small artichokes
Extra Virgin Olive Oil
Oregano
Water
How to make it
1- Dissolve the yeast in a little warm water
2- Put the whole spelt flour and salt in a bowl with the dissolved yeast and mix well. Add water little by little until the dough comes together.
3- Knead the dough until very homogeneous. Let to rise for about one hour.
4-Roll out the dough.
5- Bake it for 10 min.
6- Cover the dough with tomato sauce.
7- Remove all the artichoke petals and leave only the inner parts.
8- Steam the artichokes and cut into slices.
9- Grate the cheese and spread it over the tomato 🍅 sauce.
10- Place sliced onions, olives, artichokes and oregano over the cheese.
11- Put olive oil on the top and bake it for more 10 min.
