Quinoa salad with one of the world’s most popular health foods. It’s gluten free, high in protein and contains sufficient amounts of all nine essential amino acids. It is high in fiber, magnesium, potassium, iron, B vitamins etc..
There are 3 main types: white, red and black. Here I used white quinoa.
Nutrient content in 1 cup of cooked quinoa (185 g):
Protein – 8g
Fiber – 5g
Magnesium – 30% recommended daily
Calories – 220g
Carbs – 40g
Fat – 4g

Cook time = 10 minutes
Ingredients:
200 g quinoa
1 avocado
2 little goat cheese
Rucola
2 dried tomatoes
Himalayan salt
Herbs of your choice
1 garlic clove
Extra Virgin Olive Oil.
How to make it :
1- In a pan with about 1,5 cup of water, place the quinoa, herbs, salt, garlic, and let cooking for about 10 minutes in a medium heat.
2- In a plate place the rucola and add the cooked quinoa in the center. Add the sliced avocado and dried tomatoes.
3- on the top put the goat cheese.
4- Season with Olive oil, pepper and serve !
