The only ingredient you need is dried corn and a high-powered blender to grind the kernels. But you can buy the flour if for you is more convenient.
Ingredients:
Makes 1 cake to 4 people.
3 organic eggs
200 ml coconut milk
50g of coconut sugar (or another sugar of your choice)
1/2 cup of coconut oil
a pinch of salt
a tbsp of dried fennel seeds
1 cup (150g) of fine corn flour
1/2 cup (60g) of tapioca flour
baking powder (15g)
How to make it ?
1- Pre-heat the oven 160 c
2- In a blender add the eggs, coconut milk, sugar, salt , coconut oil and blend until it forms a homogeneous dough.
3- Add the corn flour and the tapioca flour and continue blending.
4- Finalize by adding the fennel and baking powder (without blend)
5- Place the dough in a cake pan and bake for about 50 minutes.
6- Let it cool and take it out of the cake pan.
