Carrot Cake
The best tip for this cake to be fluffy, is not to overdo the amount of carrot.
This recipe is made totally in a blender and makes the cake very soft. It is easy and the preparation time is only 15 minutes. All the ingredients should be organic!

Cook time = 30 minutes
Ingredientes :
2 medium carrots (200g)
3 eggs
3/4 cup coconut oil
1/2 cup coconut sugar
1 tbsp apple cider vinegar
A pinch of Himalayan salt
200g oat flour
100g oat flakes
1/2 cup of tapioca flour
1 tbsp baking powder
For the chocolate cover:
200 ml coconut milk
1 /4 cup raw cocoa powder
3 tbsp of coconut sugar
1 tbsp coconut oil
A pinch of salt.
How to make it ?
1- Preheat the oven 180c
2- In the blender add the carrots, eggs, coconut oil, coconut sugar, apple cider vinegar and a pinch of salt. Beat until it becomes a homogeneous dough. Then add oat flour, oat flakes, tapioca flour until becomes a not too thick dough. At the end add baking powder.
3- Transfer the dough into the baking pan for cake and bake for approximately 30 minutes. Let it cool.
For the cover:
Place all the ingredients in a medium pan at medium heat and stir until thickens.
Put over the cake !
