A Veggie Meal

Veggie meal

 

This is a Simple Veggie Meal and a balanced lunch!

If you don’t have time to think about a veggie meal instead of meat, this is a balanced suggestion to satisfy your nutritional needs.

For lunch or dinner this is a healthy option!

Source of protein : egg

fiber : asparagus + turnip

Source of carbs : sweet potatoes

Contains vitamin A ( tomatoes and egg)

Vitamin B12 : egg

Omega 3 and phospholipids : egg

Potassium and Iron : turnip + asparagus

Healthy Starchy carbs : sweet potatoes

Servings = 1

Prep. Time = 15 minutes

Cook time = 20 minutes

Ingredients:

1 pack of Asparagus (about 10 asparagus)

turnips

1 sweet potato

2 tomatoes

1 or 2 eggs

Salt and pepper to taste

Parsley and cilantro.

1 tbsp of ghee butter.

How to make it?

1- Steam asparagus, turnip and sweet potatoes until soft.

2- In a frying pan place a tablespoon of ghee butter and sauté over low heat all vegetables. Add salt and pepper to taste.

3- In a frying pan over low heat add ghee butter and fry one or two eggs with the yolk very soft.

4- Arrange on the plate and sprinkle with fresh parsley and cilantro.

It is very easy and quick to do ! Enjoy.
