Avocado and ground meat with quinoa/ chickpeas baked balls
This is a good meal for lunch. It combines protein from meat, fat from avocado and carbs from grains (quinoa and chickpeas). You can make these flat balls with the cooked quinoa and chickpeas leftover from another meal.
Ingredients : All organic !
Make 2 servings
300 g ground meat
Onions
Garlic
Herbs and spices
100 g of cooked quinoa
100 g chickpeas (soaked overnight)
50 g corn flour
tomatoes
Hymalaian salt
1 egg
How to make it ?
1- Sauté the ground meat with onion, garlic, chopped tomatoes, chives and spices like parsley, coriander, oregano, turmeric and salt.
2- Cook the chickpeas overnight soaked with water and salt until soft.
3- On a food processor place the cooked quinoa, chickpeas, parsley, salt and one egg. Process without grinding too much.
3- Form balls and pass into corn flour and flatten. Put the flat balls on a baking sheet lined with parchment paper and bake at 160c until golden (about 20 minutes).
4- On a plate set a green leaf salad with one avocado. Add the meat and the flat balls.
