Pineapple pie

This delicious and healthy dessert I made with organic ingredients and it is gluten free. I combined oat flour and tapioca flour which gives stability in the dough due starch content.
Pineapple or Ananas is an incredible and healthy tropical fruit originated in South America. Pineapples are low in calories but high in nutrients and antioxidants. They are specially rich in vitamin C and Manganese.

Prep. time = 15 minutes
Cooking time = 30 minutes
Ingredients :
- 200g oat flour
- 1/2 cup tapioca flour
- 1 cup coconut milk
- 2 tbsp of honey
- 1 tbsp coconut oil
- cinnamon powder
- 1/2 pineapple
- 50g yeast
How to make it:
1 – Peel the pineapple and cut into 4 very thin slices, and cut in half 3 slices and 1 slice whole for to put in the middle of the pie. Cut some small cubes to put in the dough.
2 – In a round shape, grease with coconut oil and sprinkle with cinnamon. Then place the whole pineapple slice in the middle and arrange the slices cut in half in the entire shape.
3 – In a bowl put the oat flour, tapioca flour, honey, coconut milk and work the dough until smooth. Add the yeast and mix well.
4 – Pour the dough into the shape, over the pineapple, place into the oven pre-heated at 180c for about 30 minutes.
5 – Take it out of the oven and turn the pie upside down. Now is ready to eat!
