Artichoke Soufflé:
A fine starter for your gourmet dinner !
In this recipe I chose to make a delicious artichoke soufflé which is a light and tasty dish. The macadamia sauce is also super tasty.
Macadamia nuts are tree nuts that have a subtle, butter-like flavor and creamy texture. They are reach in monounsaturated fats, which may boost heart healthy and lowing bad cholesterol.
Artichoke has been used for centuries for its potential medicinal properties. This plant originated in the Mediterranean is often considered a vegetable, but in fact is a type of thistle.
Artichokes are low in fat, high in fiber, and loaded with vitamins and minerals, like vitamin C, K, Folate, Phosphorus and Magnesium. They are also one of the richest sources of antioxidants.

Prep. time = 20 minutes
Cooking time = 30 minutes
Ingredients:
- 6 artichokes
- 200g macadamia nuts
- Hymalaian salt
- 200ml of coconut milk
- 2 eggs
- pepper
- 2 onions
- 1 garlic clove
- water
- nutmeg
How to make it:
1- Steam the artichokes until soft.
2- In a pan saute the onions and garlic with a tbsp of butter ghee.
3- Add the artichoke hearts and continue saute for 5 min.
4- Add salt and pepper.
5- Blend all together.
6- Add 2 egg yolks and mix.
7- Beat the 2 egg whites in snow and add to the artichoke dough. Put in a muffins pan and place to the oven to bake it for about 25min.
8- In a blend put the macadamia soaked for 6 hours, with 200ml of coconut milk (or another plant based milk), and blend until creamy. Add a little nutmeg and heat the sauce.
9- On a plate put the macadamia sauce, the artichoke soufflé and decorate with same fresh greens.
