Roman Style Artichokes

 


Roman Style Artichokes,
is a typical dish of Roman cuisine. It is prepared in each household and served in many restaurants.

Artichokes are low in fat while rich in fiber, vitamins, minerals and antioxidants. According one study by US departament of Agriculture found that artichokes were one of the top vegetables in terms of antioxidant levels. You should dont ignore the petals and eat only the hearts, because they have the main nutrients.

Ingredients:

Make 2 servings

4 artichokes

Vegetable broth

1/2 cup Lemon juice

A pinch of Himalyan salt

1 clove garlic pressed

A bunch of parsley chopped

Fresh rosemary chopped

1 cup spelt bread crumbs

Organic extra-virgin olive oil

How to make Roman Style Artichokes?

Preheat oven to 180C.

1- Peel the outer layers of each artichoke till it reaches its heart, eliminating all the hard leaves.

2- On a small bow prepare the filling : chop a bunch of rosemary, parsley, salt, black pepper, the mashed garlic and mix well with the bread crumbs. – reserve.

3- Dip the artichokes for some minutes in water with lemon juice.

4- Open the artichokes in the center and remove the choke.

5- Stuff the artichokes with the mix of bread crumbs.

6- On a baking tray, lay the filled artichokes upside down and cover with the vegetable broth. Bake it for 35 minutes. Drizzle with raw olive oil and serve with a fresh salad!
