Super Healthy Avocado Salad

Avocado Salad with radicchio

This super healthy Avocado salad is packed with organic ingredients and balanced for a nutritious meal. Avocados and olives are good fats. Pomegranate is an extremely healthy fruit. The seeds can be eaten and they are good to you! It contains 48% of the recommended daily intake of vitamin C.

Avocados are full of healthy, beneficial fats that help to keep you full and satiated. When you consume fat, your brain receives a signal to turn off your appetite. Eating fat slows the breakdown of carbohydrates, which helps to keep sugar levels in the blood stable.

This delicious Avocado Salad is a good way to eat healthy fats!

One serving (one-fifth of an avocado, approximately 40 grams) contains:

  • 64 calories
  • almost 6 grams of fat
  • 3.4 grams of carbohydrates
  • less than a gram of sugar
  • almost 3 grams of fiber

Radicchio or Chicory has a bitter taste that goes well with many Italian dishes. It’s a traditional ingredient in the Mediterranean diet. While low in calories, radicchio is high in zinc, copper and vitamin K.

 

Avocado Salad super healthy


Servings = 2

Prep. time = 5 minutes

 

Ingredients:

 

  • 1 small red chicory
  • 1 avocado
  • 2 sliced carrot
  • arugula
  • 10 olives
  • some pomegranate seeds

How to make it:

1 – In a plate arrange the whole red chicory leaves and put  the sliced avocado on them.

2 – Place in the middle, the arugula, carrots and olives. Sprinkle with the pomegranate seeds.

3 – Season with organic Extravirgin olive oil and lemon, or another seasoning of your taste.
