The cassis berries or black currant, is a native shrub (ribes nigrum) of Northern Europe and Northern Asia. The berries have a sweet, astringent flavor, similar to that of black grapes. The berries grow in clusters and have a thin skin.
The berry is said to have anti-inflammatory and immune-boosting properties.
Our cassis ripen in Aargau, where they harvest and process them. The berries go to dry below 42 c and thus correspond to raw food quality..
